Fenugreek

Widely used in Indian, North African and Middle Eastern cuisine. A slightly bitter spice, it is often used to flavor vegetable dishes and marinades. Roasted in fat, it acquires a slightly sweet taste reminiscent of walnuts. The seeds can also be soaked for a dozen hours in water.
