Chai is the Hindi word for tea on the Indian subcontinent. It is usually very sweet black tea mixed with masala (a blend of spices) in boiling milk in a saucepan. It's also known as masala chai. Chai is often served sweet or very sweet, which enhances the taste of certain spices. Most often, chai is prepared by decoction, by throwing tea leaves and spices into boiling milk. The milk is sometimes mixed with water. The tea and spice residues are filtered off before the tea is served. Also delicious added to coffee in a piston coffee maker.
