Berbéré

Berbere is a preparation of spices and herbs used in Ethiopia. It contains dried chili, garlic, ginger, cardamom, cloves and cinnamon. This preparation is used in most Ethiopian sauce dishes. In Europe, this blend of spices is much sought-after, since it can serve the same culinary function as paprika, while having a more developed aromatic power. In Ethiopia, each family prepares its own berbéré according to taste, but it is always very pungent. In Europe, the preparations available generally contain less hot pepper.
