Use it on salads, but also on meats, especially lamb and pork, and white fish. It is exceptional with foie gras. It will magnify your potato dishes, white cheeses and goat's cheese. Perfect for pâtés, preserves and pickles. Sublime on chocolate desserts and with fruits such as melon, strawberry, cherry, apple and pear.
Crush when ready to use. A coarse grind allows it to develop its full flavour. Avoid cooking it, which would make it bitter and pungent, and cause its more subtle aromas to disappear. Use it on your dish just before serving.
